Greek-Style Scampi
serves 4
Ingredients
1 1/2 lb large shrimp, shelled and deveined
5 cl garlic, minced
28 oz canned whole tomatoes, drained, coarsely chopped
1/2 C sweet onion, large dice
1/2 t red pepper flakes
1 T oregano
2 T capers
4 oz feta cheese, crumbled
2 T lemon juice
1/2 C parsley, chopped

Instructions
Sauté the garlic and onion in olive oil until translucent. Add the tomatoes, oregano, red pepper flakes, and 1/4 C parsley, simmer 10 minutes, then add the shrimp and cook until the shrimp is done.
Mix in the feta, the remaining parsley, lemon juice, and capers.
Plate over pasta, rice or orzo, and serve.
