Greek-Style Scampi

Instructions

  1. Sauté the garlic and onion in olive oil until translucent. Add the tomatoes, oregano, red pepper flakes, and 1/4 C parsley, simmer 10 minutes, then add the shrimp and cook until the shrimp is done.
  2. Mix in the feta, the remaining parsley, lemon juice, and capers.
  3. Plate over pasta, rice or orzo, and serve.
